SUMMER SUMMER SUMMER TIME!!! Summer is in full swing and we love any reason to fire up our grill and create mouthwatering cuisines. Choice meats are important, but so are the sauces. Here are our tips on ingredients to use for delicious
Sauces and Marinades:
Most sauces and marinades start with a base and hundreds of flavors can be added. Salt and sweet are nice pairs. A roux is used for most cream sauces and gravies. Have fun experimenting with a basic recipe and try new herbs, vegetables and intermingle sauces. Have fun!
Base: teriyaki, roux, tomato
Acidity: lemon, lime, Dijon mustard, vinegar, tomatoes
Sweet: honey, brown sugar, maple syrup, puréed fruit
Salt: salt, chicken broth, fish broth, soy sauce
Heat: chipotles, cayenne, black pepper, red pepper flakes
Flavor: garlic, herbs, onions, ginger, soy sauce
Oils: butter, olive oil, sesame seed oil
Simple BBQ sauce
1c ketchup
1T prepared mustard
1/4c brown sugar
Splash hot sauce
Splash Worcestershire
1/2t liquid smoke
1T water
